Excellence of the Casertana Breed
The raw ham of Fattoria Muccio comes from selected legs of Casertana pigs, raised until they reach a high weight to guarantee superior quality. Appearance and Taste: Pear shape, uniform pink interior, edged with fat. The aroma is fragrant, the flavor delicate, slightly salty and aromatic. Artisanal Processing: Only three ingredients: Casertana pork leg, salt and time. After a careful massage with salt, the legs are rested, washed, brushed and left to dry before a long curing process in controlled environments. Traditional Grating: During curing, a mixture of pork fat, salt and pepper protects the ham, preventing excessive drying and enriching its flavor.
