The seasoned lard of Fattoria Muccio is obtained exclusively from black pig meat, through salting (still done by hand), flavoring and seasoning of the layer of fat that is found just under the skin of the pig. This cut is taken from the back and the upper part of the sides. The lard is flavored only with pepper, rosemary and sage.
