The capocollo of the Nero di Muccio line is a seasoned cured meat obtained exclusively from Casertana breed pigs, and is obtained by salting the cut of meat located between the head and shoulder of the pig. It has an elongated cylindrical shape. When cut, its appearance is dark red with the presence of white fat veins. This particular structure with fatty part interspersed with lean, gives the capocollo softness and taste.
