Pancetta is obtained from the fatty and muscular covering of the pork rib. It is rolled up and has an elongated cylindrical shape or stretched out. Its appearance when cut is characterized by the typical alternation of circular layers of red and pinkish white. This particular structure with fat and lean part, gives the pancetta softness and flavor.
