Nero di Muccio - Pancetta

Pancetta is made from the fatty and muscular layer of the flank of the Casertana breed of pig. It is available either rolled into an elongated cylindrical shape or flat. When sliced, it is characterised by the typical alternating circular layers of red and pinkish-white. This distinctive structure, comprising both fatty and lean parts, gives the pancetta its tenderness and flavour.
