Soppressata is obtained from the finest pork meats such as ham, fillet and shoulder without nerves and with the addition of a few cubes of well-selected fat from pork lard. The selected meats are cut into strips and minced coarsely and flavoured with black peppercorns, left to rest overnight and then stuffed into natural casings.
